Did you know that a single Pineapple takes two to three years to grow? This is why, when you have a pineapple that’s been sitting on the counter a little too long, there’s only one choice: drop everything and make this incredible shrub, which also happens to go perfectly with a packet of SPIKE.
Shrubs are fabulous alcohol alternatives that also happen to aid digestion. Plus, they’re so tasty, easy to keep in the fridge, and super refreshing as spring heads into summer.
Ingredients
- 1 Pineapple
- 1 cup of vinegar (apple cider, white, and rice are all good choices)
- Sugar to taste (I used about ⅓ of a cup)
- ⅓ - 1 SPIKE Delta-8 or cannabis packet per-serving (depending on your dosing preference!)
Directions
Cut the pineapple into chunks and put the chunks into a glass mixing bowl. Then grab a fork and a wooden spoon and go to town smashing the pineapple. The juice will seep out of it around the chunks in the bowl.
Next, sprinkle the sugar.
Now put your smash in the fridge and leave for 8-24 hours (or as close to that as you have time for - it’s just drinks, people).
Once the sugared pineapple has been in the fridge for the amount of time above, go ahead and take it out and add vinegar to the bowl. Put it back in the fridge and let it sit for another 24 hours.
After 24 hours have passed, put the mixture in a jar. You can strain the chunks out if you want. I personally love the chunks and leave them in. You do you.
To make a delicious shrub drink, just take 2-3 tablespoons of the shrub and mix with a glass of sparkling water. We like to add one 20mg packet of SPIKE Strawberry Lime Delta-8 to this mix. You know your preferred dose. Optional garnish with a little pineapple slice.
